Nose
dry pine needles, forest floor leaving a faint sense of peat presence, bruised peach and nectarine, pineapple, chalk, langoustine claws, kiwi skin, the more it sits the more tropical it gets with papaya, mango and breadfruit, lime zest and minerality. The nose really does grow more expressive the longer it's left alone bringing out a more honeyed and waxy quality.
Palate
wax and french polish, dark honey, whispy smoke like your coat the next morning following a trip to the pub pre smoking ban, seared scallops and oyster shells, those tropical fruits remain, fruit polos (the green ones specifically), lemon thyme and good olive oil, Barbour jacket, panna cotta with a tropical fruit compote on top.
Finish
There's a little cracked pepper, green apple peels and ash in the tail with a pleasantly long finish.
