- Nose
- A delicate aroma with brown sugar, fresh plum, cherries, butter, coffee, and caramel. Classical and elegant modern sherry wood profile with tartness, pomegranate molasses, rosehip syrup, hazelnut butter, and orange oil-rubbed writing desk wood. With air, it deepens to burnt chocolate scone batter with cognac-plumped raisins, savory notes of toasted vermicelli, leathery jerky, smoked mushroom, rosewood boxes, and mothballs.
- Palate
- An explosion of flavors with sweet caramel, light then heavy spice, apple, cinnamon, dark chocolate, and dried stone fruit. Excellent leathery arrival, with cask influence balancing sweet-savory notes of peppered dried beef strips and puddingy Oloroso. Orange zest sprinkled into a goblet of Armagnac, chocolate creme patisserie, woody chestnut mash, and acorns. A certain meatiness with earthy, savory notes of mushroom, cream of mushroom soup, bourguignon with polenta, and thyme-oil emulsion.
- Finish
- Long, delicate, and complex. It grows before diminishing, lasting with dried fruit, sweetness, and lots of spice, particularly cinnamon. Notes of cream of mushroom soup, caramel popcorn, hazelnut praline, burnt caramel, varnished wooden dessert platter, chocolate-spiked brandy, cremeux, and ember.
