Description
Our Master Whiskymaker Graeme Macaloney studied traditional peat smoking methods in Islay. Then using the finest barley that Canada produces and specially sourced peat with unique terroir, he created a spirit which won 'World's Best' newmake at the prestigious World Whisky Awards in 2020 and again in 2022. This whisky is from our 'peated' single malt range, double distilled in our custom-made twin-pot stills, and uniquely peat-smoked at the distillery, a traditional practice only done by a tiny handful of distilleries. The patient, yet purposeful, distillation produces a complex, layered and balanced new-make whisky-spirit. The 'heart' of the new-spirit, Dr. Macaloney, selected the optimal middle-cut, trickles off our copper pot stills as 'the best that I have tasted in any distillery at this stage, super fruity'. This peated distillate is equally smooth and fruity, but now layered with delicate, complex, peat-smoke notes! Peat smoke contributes true terroir driven by its unique aroma profile. This expression allows you to explore how Washington peat differs from our Canadian and Scottish peats. It was distilled using local barley peat-smoked at the distillery with Washington State peat, from just outside the Canadian border. It was then matured in a single carefully selected Portuguese red wine barrique, thereby allowing comparison of Washington peat across our range of wine casks including red, white, Port, Oloroso, and PX, etc.
