Description

Mellow Corn Bottled in Bond Corn Whiskey is a unique and often underappreciated spirit produced by Heaven Hill Distillery in Bardstown, Kentucky. It is a Kentucky Straight Corn Whiskey, distilled from a mash bill of at least 80% corn (some sources indicate 90% corn, 10% rye and malted barley, or 80% corn, 12% malted barley, 8% rye). Adhering to the Bottled-in-Bond Act of 1897, it is aged for a minimum of four years in once-used bourbon barrels (or used oak barrels), and bottled at 100 proof (50% ABV) under U.S. government supervision. This aging process in used barrels, unlike bourbon's new charred oak, results in a lighter color and allows the corn-forward sweetness to shine, making it a distinctive and affordable American whiskey.

Nose
Sweet corn, vanilla, caramel, and sometimes hints of buttered corn, toffee, nuts (pecans/peanuts), green apple, and light oak.
Palate
A viscous mouthfeel with sweet corn, vanilla, and caramel notes, often accompanied by toffee, peanut brittle, dill, allspice, and light oak. Some detect a slight rye spice, buttered popcorn, or even fruity notes like apricots or banana chips.
Finish
Medium to long, with lingering sweetness, vanilla, corn, and often notes of oak, allspice, peanut, lemon peel, tobacco, or cinnamon. It's generally smooth and warming despite the 100 proof.
