Description
This is Triple Eight Distillery's original vision for an island single malt whisky, crafted on Nantucket Island, Massachusetts. It begins with a flagship pale ale recipe using 100% Maris Otter malt, an heirloom barley variety. The grain is milled, mashed, and fermented at Cisco Brewers, then distilled twice through an Arnold Holstein hybrid pot still at Triple Eight Distillery. The whisky is aged for 8 years in a variety of ex-bourbon casks, then finished in re-toasted red wine barrels. This labor-intensive method mutes intense wine influence, allowing for a subtle partnership. The distillery leverages Nantucket's unique maritime climate, similar to the western isles of Scotland, allowing the ocean breeze to mature the spirits in ventilated warehouses. The Notch has been recognized as one of the oldest single malt whisky distilleries in the United States, leading the way toward a new category of American Single Malt Whisky.
