- Nose
- Mellow, with elusive yet unmistakably maritime top notes of crispy edible seaweed, crystal salt and coarse black pepper on a wooden trencher, perhaps accompanied by very lightly smoked fillets of white fish. After a while a spoonful of sweet chilli sauce is added to the platter while with a drop of water, light olive oil becomes the top note. Coastal brine, citrus zest, and gentle floral notes. Fresh banana bread, with hints of pears. Savory, salty, and sweet, earthy barley, light salt, over a touch of caramel, vanilla, and toffee. Hint of ginger spice. Tart white fruits, white wine, short bread cookies, orchard fruits. Honey, lemongrass and vanilla. Driftwood and chalk. Grapefruit and lychees. Fresh raw dough. Vanilla ice cream on the beach. Pastries, croissants and Danish pastry. Peach yoghurt. Hay at a dairy farm. Very salty, tangerine, banana cream pie, and a hint of passionfruit. White chocolate, browned butter, vanilla, milk tea, and a hint of almond.
- Palate
- Very smooth, soft and mouth-filling in texture, the taste is fruity and lightly citrus-sweet, balanced by a pinch of salt mid-palate and an insistent yet never overpowering spiciness from the fresh-charred casks. The effect is lush and vigorous, with a great balance between crunchy wood spice and fresh, fruity distillery character. A beautiful harmony of flavors. Initial sip reveals a burst of luscious caramel and toffee, complemented by hints of ripe orchard fruits. Subtle spices emerge, including ginger and cinnamon. Spicy as hell initially: Szechuan pepper and cloves, then fruit and subtle vanilla notes come through. Sweet and spicy, with a subtle hint of smokiness and a refreshing citrus essence. Tart Lemon jumps right out, turning to white wine as you swallow, followed up with rich salty malt. Sugar cane and light vanilla icing. Slight waxy note. Thick mouthfeel. Sweet and sour. Lemons and grains. Granny smith apple. Salty, like licking your lips after spending the day on the beach. Danish pastry with sour jam. Peaches and malted milk. Underage cheese. Zesty. Freshly squeezed lemon juice, soft salt sparkling water and bitter fresh herbs. Sweet, spirity, and punchy on the arrival with bright yellow plums, orange zest, honey, and salted caramel. Develops to buttered toast, vanilla, and spicy sea-sprayed oak.
- Finish
- Quite long, finishing spicy with a shake of pepper. Water brings forward a lovely smooth warmth in the aftertaste, as if to herald a final gleam of light. Long and satisfying, leaving behind traces of oak, pepper, and a lingering sweetness. Long, smooth, and pleasantly warming. Long and creamy with a note of custard. Moderately peppery but ultimately enjoyable. Slight waxy note that's turning towards slight oak. Medium short. Orange peel, a hint of wax, and more plums and fresh flowers. Candied pineapple. Honey oat bars and buttery shortbread. Slightly grassy. Trails off into soft fragrant peat smoke with a hints of brine and black pepper. Lemon hard candy. Pasty out of the oven that's just undercooked. Pineapple and vanilla sugar. Mineral notes, like seashells. Lemon, peach and milk. Tinned pineapple. Medium length with a hint of smoke, and more olive brine, salt, and toasted oak.
