Nose
Quite a bit of vanilla, with a tiny whiff of smoke in the background. Oak, barley and straw, with fresh apple and pineapple. A tinge of salinity to make for a coastal distillate. Velvety smooth with creamy vanilla, green apples, stewed pear, mango, strawberry, and grassy aromas.
Palate
Reasonable with not too much bite from the alcohol. Vanilla pops up first, with dry notes from barley and oak. Fruit is a bit subdued but present, with fresh apples and pineapple. Prominent straw notes, marram grass and sandy beaches. Creamy vanilla, apples, pineapple, crème brûlée, macadamia nuts, and a strong chili pepper note.
Finish
Continues with lots of dryness, a very warming feeling. Straw, oak, barley, some fruit and pastry notes. Warming and creamy with citrus and pineapple.
