Nose
Lean and mellow. Dry and salty smoke, but noticeably mellow with age. Apricots and citrus. Hay and old books. Maybe some nori.
Palate
Arrives fruity and juicy with quince paste, peach jam, and honeycomb ice cream. Develops to savoury notes of dried mushrooms and chilis before turning cool and mineral: chalk, leather, and licorice.
Finish
Salty and minerally. Orange, elderflower, and strong green tea.
