Description

An English whisky distillery that was founded in Oxford in 2015 by Still on the Hill Ltd. Specialising in distilling ancient heritage grains (rye, wheat and barley), it operated two custom-built pot stills and 40-plate column stills. In 2024 it was closed and the operation relocated to Yorkshire. A historic London wine merchant that traces its origins back to 1698. The company has long-association. This English rye whisky was distilled in 2019 and matured in a single refill hogshead cask until 2023. It is part of 'The Collective #1: The Pioneers' series by Berry Bros & Rudd, which celebrates sustainable brands.

Nose
Enticing savoury aromas of white chocolate, Danish rye bread, and dark chocolate. Very cereal-forward, with slivers of porridge, mown hay, heather flowers, cocoa, clay, melted butter, milk powder, fir trees, and warm vanilla custard.
Palate
Full-bodied rye notes, alongside citrusy Japanese Miyagawa, poppy seeds, and spice. Medium creamy mouthfeel with prominent dark rye spices, a bright liveliness, tinges of black pepper, nutmeg, cloves, aniseed, satsuma, and almond paste.
Finish
Medium to long, with lingering spices, chaff, and juicy orchard fruits. Quite rich and lovely smooth texture.
