The Rosebank 31 Year Old Release 2 is a limited edition Lowland Single Malt Scotch Whisky, distilled in 1991 before the distillery's mothballing in 1993 and bottled in 2022. This un-chillfiltered expression, the second in the Rosebank Legacy Series, matured for over three decades in refill Bourbon and Sherry casks. It is celebrated for its delicate, floral character, earning Rosebank the title 'King of the Lowlands'. This release captures Rosebank's historic house style, offering a rare glimpse into the distillery's character during its final operational years before closure.

Nose
Fresh and vibrant with citrus tones of lime and lemongrass, layered over coriander seed, clove, soft vanilla and sugared almonds. Also described as light and oily, with buttery banana bread sponge cake topped with toffee icing, dried apricot, dried red apple slices, and chopped walnuts.
Palate
Light yet deeply expressive, with mint and chamomile weaving through notes of leather, ripe berries, and banana loaf. It also presents a harmonious interplay of fresh fruits and spicy accents, a subtle sweetness, pear with muscovado, grape must, sour gooseberry and raspberry, clove spice and fennel.
Finish
Lingering and refined with sweet peach, gentle oak spice and persistent herbal notes. Long and elegant, with a soft, warming conclusion. Oily and creamy.
