Nose
Sea air, streaky bacon, rich smoke, lemon peels, and thyme honey with toasted almonds, soft vanilla, and drying peppery spice. Also notes of capers, malt loaf, fresh green apples, vanilla sponge cake, pencil shavings, coastal sea breeze, freshly squeezed lime juice, and whipped cream.
Palate
Crunchy brown sugar, ash, vanilla cheesecake, sweetened coffee and Christmas pudding fruit. Underneath there's oak char and a little damp wooden furniture. Also soured cream, minty chewing gum, sugar dusted shortbread, lemon peels, and orchard fruits.
Finish
Lemon cough sweets and whispers of smoke. Also caramel wafers, toffee, coastal peat smoke, and lingering ash and tar flavors.
