Description

Founded in 2015 by Eric and Anne-Hélène Cordelle, the Vercors distillery produces a 100% organic single malt whisky. Distilled in 2017 at a low temperature in a stainless steel still and then a copper Charentais still, this concentrated version reveals a bright and nuanced palette of intensely malty, fruity, and spicy flavors and aromas. This particular release, 'Version Française,' was selected by La Maison du Whisky to celebrate its 65th anniversary and spent three years maturing in acacia casks.

Nose
Lively and fresh, with malt and green barley harmoniously mingling with hints of vanilla, cut hay, lemon, ginger, cinnamon, clove, gentian, fresh fruits (apple, peach, Mirabelle plum), and citrus zest (orange, mandarin).
Palate
Rich yet subtle, with a remarkably smooth apricot attack. Notes of golden-blonde barley, custard, apple tart, dried fruit (date, fig, chestnut), and nuts.
Finish
Long and well-balanced, lingering on dried fruit and nuts, fading into acacia honey, chamomile, almond milk, salted caramel, and hazelnut. The retro-nasal olfaction reveals a fine note of salted butter caramel and ground walnut, with cinnamon and grated ginger in the empty glass.
