Description

Shindo Experimental 01 is the debut single malt from Japan's Shindo Distillery, founded in 2021 in Fukuoka. This unpeated single malt is a complex vatting primarily matured in ex-bourbon casks, with contributions from new Mizunara, Oloroso sherry, and refill Scotch casks. The distillery, backed by Shinozaki's 200 years of fermentation expertise, focuses on experimental fermentation to create a nuanced and layered flavor profile. It is bottled at 50% ABV.

Nose
Bright tropical fruit up front, then buttercream, soft vanilla and a distinctly milky sweetness. Also, soft orchard fruits—pear and green apple mainly—with a subtle perk of lemon zest. Something herbal hovering in the background, almost like fennel or anise, balanced by a dry malty scent. A slightly vegetal note emerged—reminiscent of steamed rice.
Palate
Ripe fruit, gentle oak, sweet cereal notes and a restrained, elegant spice. Gentle sweetness—ripe melon and barley sugar—with a delicate bitterness like green tea. Mid-palate, a shift towards savory territory, like miso or mushroom broth, but extremely subtle. Balances sweetness with umami.
Finish
Milk fudge and soft oak, with a clean, composed fade rather than a grand finale. Traces of toasted cereal and a lingering rice cracker dryness. A hint of white pepper came in late, offering a light tingle. Leaves the palate refreshed.
