Description

A distiller and independent bottler, founded in 2013 as the Black Isle Whisky Company in 2013 by Simon and Philip Thompson. It opened the Dornoch distillery in 2016, producing its own single malt whisky and gin which it markets using the Thompson Bros brand name. This is a Speyside single malt from an undisclosed distillery, distilled in 2011 and matured in two refill sherry butts. It was bottled in 2023 at 48.5% ABV, non chill filtered and with no added colour.

Nose
Very close to the raw ingredients; grist, boiled barley sugar sweets. Some lime cordial, grapefruit peel, freshly opened box of Swan matches, dry Riesling, and lemon juice. Some meaty/umami notes; Gamey with a touch of Amontillado and Kombu seaweed.
Palate
Barley notes continue; Robinsons barley water, baked pastries & bread, grapefruit juice. More gamey notes, meaty with a background hint of struck match. Sultanas, mace, ginger lime wine gums & sea salt.

Ginger, citrus peel, sultana and Amontillado Sherry.
