Description

Sullivans Cove French Oak 18 Year Old is a highly prized, rare Australian single malt whisky from Tasmania, known for its deep complexity from long maturation in French oak casks (often ex-tawny or ex-white wine), yielding intense dark fruit, spice, and sweet notes, winning major awards like "World's Best" and representing pinnacle Australian distilling with limited, collectible single cask bottlings. This particular cask, TD0112, is an 18 Year Old French Oak ex-White Wine single cask, boasting a depth and refinement that can only come with age. It is the very first Old & Rare bottling drawn from this style of cask, aged for eighteen years in a French oak cask previously used to mature white wine, resulting in a whisky of remarkable power, depth and character.

Nose
Rich and savoury, the nose opens with deep herbal tones of sage, thyme and rosemary, layered with liquorice ice cream, star anise and salted caramel. Roasted plums and stewed peaches bring warmth and fruit weight, while subtle hints of cinnamon quill, dried curry leaf and native apples evoke the scent of warm bushland. Texturally, it's oily and chewy, with mild savoury tannins drawing the aromas inward.
Palate
Creamy and full-bodied, the palate is carried by spiced custard and baked apples, unfolding into brown sugar, poached pear and buttery shortcrust pastry. Honeyed macadamias and candied walnuts add texture and richness, while a delicate tannin frame gives structure and lift. There's a sappy, spicy quality that brings energy and flow to the dense, layered sweetness.
Finish
Bold, lingering, syrupy and expansive. Treacle and golden syrup dumplings sit alongside notes of blackberry sauce, ginger wine and caramelised pineapple. A flourish of rose water, Turkish delight and dried apricot rounds out the finish, leaving a plush, aromatic impression.
