Description

This Talisker 1988 Prima & Ultima 31 Year Old is a single malt whisky from the Isle of Skye distillery. Distilled in 1988 and bottled in 2019, it is part of Diageo's inaugural Prima & Ultima series, a collection of rare and old whiskies. This particular release is a marriage of the last six refill American oak casks from 1988, which were noted for their unusually less peated and more rounded character. Only 721 bottles were released.

Nose
Fresh fruits and white pepper, with brine and rock pools. Maritime overall, with smooth honey and rich red fruit tartness. Boggy notes, old leather, tobacco, peppercorns, and vanilla custard, or sweet vanilla, heather honey, fruit syrup, toasted spices, and peat smoke. [3, 4, 6, 9, 16, 28, 30, 31, 32, 34]
Palate
Fruit forward (ripe red apples and pears) with barley sugar. Peat is apparent, along with prickly spice and a mildly medicinal character. Richly textured with a smooth, oily mouthfeel, intense and lightly sweet, with a light saltiness, a hint of cigar-box smoke mid-palate, and a soft hit of chilli pepper. Smoky and peaty with an earthy profile, old oak, astringent black tea, and almond. [3, 4, 6, 9, 16, 28, 30, 31, 32, 34]
Finish
Long, with salt and black pepper. Gently drying, with honeyed sweetness alongside smokiness and light spice. Peaty with tea notes turning towards lapsong suchong, and oak becoming astringent. [3, 6, 9, 16, 28, 30, 32, 34]
