Nose
Drying sherry notes of booze-soaked raisins, juicy stone fruit, distant mild sea spray with a hint of earthy, dry peat. Berries, sweet cream, dash of pepper, chocolate, bacon, seashores, caramel, flower gardens. Smoke, peat, brine, dates, raisins, red fruits, vanilla, sherry, oak. Light smoke, creamy toffee, pronounced fruit acidity. Fresh apples, pineapple, plum, gingerbread biscuits, burning toffee, dark chocolate with orange, earthy peat, smouldering fire, old cigar leaf, cinder toffee.
Palate
Juicy, sweet stone fruit, raisins, newly-ripe banana, drying with mild earthy peat and bitter-sweet dark chocolate, distant salt with caramel, burst of pepper. Sweet notes, dramatic shift to pepper, fleeting peat. Smoke, sea salt, spicy, peat turns into jam, raisins, figs. Sweet to start, smoke and tar exploding, sweet-centred, like liqueur chocolate. Full on, peat and smoke bring earthiness, fruity side, pepperiness/chilli.
Finish
Relatively short, clean, still some stone fruit and pepper, drying. Long, best elements clipped, sweetness subdued by astringent and bitter notes. Long, blend of smoke, salt, jam, fruit, dry feeling.
