- Mild, reserved, with fruit acidity (red apple skins), dried fruits, rum toffee, chocolate brownies, sooty smoke, aromatic spices (frankincense, clove, cedar), polished oak, boiled sweets. With water, it becomes more maritime with iodine, menthol, beach scents, milk chocolate, and soft vanilla toffee. Also notes of salt, pepper, and wood varnish.
- Palate
- Slow but consistent, with autumn berries, dried fruit, cherry stones. Initially cooling then hot and lively. With water, smooth texture, sweet, cooling (tarte au chocolat), warming, with salt, acidity, and measured, sooty smoke. Also smoke and salty sea air, smoked deli meats, charcuterie, orchard fruits, golden raisins. With water, Fig Newtons and Champagne grapes. Dark cacao, white chocolate, pepper, ginger, chili, citrus, licorice, salty toffee, oak, and fresh hay.
- Finish
- Long, with roasted malt, a ghost of black pepper, nutmeg in a smoky and savoury aftertaste. Smoke with a bit of ash, salted meats, and Fig Newtons. Gently drying, with a hint of smoke in the moreish maritime aftertaste.
