- Nose
- A nice combination of baked apples and coconut shreds, with an abundance of spice, including ginger powder, aniseed and cinnamon bark. Also notes of marzipan/almonds, icing sugar, sweet raisins, and buttery fresh croissant. Enticing aromas reminiscent of carrot cake and Christmas cake, with hints of star anise, golden raisins, coconut shavings, marzipan, and tonka beans.
- Palate
- Bigger and a bit more bitter than the nose at first, then sweeter cinnamon pastries and baked apples arrive. Plenty of dried coconut, some licorice, and a fair amount of wood spices, quite hot and earthy at times, with sweet fruit in the background. Notes of red grapefruit, peppery heat, marzipan, tonka beans, dried fruits, spiced cake-like sweetness, almond flour, and freshly ground espresso. It can also be quite dry with bitter notes of chestnuts and candied ginger, and resinous hints.
- Finish
- Apple sweetness alongside wood spices – mainly on pepper, licorice, and cinnamon, and a very faint hint of grapefruit pith. Long finish with spice notes persisting, including cinnamon, pepper, and nutmeg, along with traces of baked apple. Vanilla, oak spice, and a malty character also come through.
