Nose: Rich aromas of dried fruit, toffee, and spice with hints of dark chocolate and oak. Honey, vanilla, pomander, cocoa powder, red delicious apple skins, caramelized sugar, burnt sugar.
Palate: Full-bodied and smooth with notes of sherry sweetness, honey, nutmeg, and roasted nuts balanced by oak and malt. Dried fruits, molasses, big spice, raisins, prunes, hints of leather, slightly astringent oak, thick and creamy, caramel sweetness.
Finish: Long, warming, and complex with lingering flavors of cocoa, spice and fruitcake. Vanilla, maple syrup, pencil shavings, cinnamon, peppery spice, Oloroso sherry notes, raisins, winter spices.

Sherry sweetness gives the dried fruit and molasses a generous centre, while nutmeg and the larger spice notes keep it from reading as simply sugary. The finish brings together cocoa, fruitcake and peppery spice, a combination that fits a preference for sweetness with a clear spicy counterpoint. Oak is present too, including a slightly astringent edge on the palate, making the character seem richer than purely soft or confectionary.
