Thompson Bros SRV5 8 Year Old, European Oak Solera Cask, Thompson Bros, 48.5%

A distiller and independent bottler, founded in 2013 as the Black Isle Whisky Company by Simon and Philip Thompson. It opened the Dornoch distillery in 2016, producing its own single malt whisky and gin which it markets using the Thompson Bros brand name. This 8 year old blended malt consists of malt whiskies, selected by Thompson Bros and combined and rested in a 1000-litre (or 1200-litre) European oak solera vat, which is never fully emptied. Each batch is left to gently integrate with the whisky reserved from the previous batch. It is bottled without chill-filtration and no colouring added.
