Nose
Light, fresh and sweet. Freshly sliced oranges with malted barley. Apples and ripe pears. Some minerality, salted caramel and wet sand. Danish butter cookies. Honeysuckle, peat, very pleasant earthiness, no smoke. Sugared barley with oak and spicy notes. Very fresh nose! Some ginger and dryness with toast.
Palate
Lots of barley upfront with vanilla and honey sweetness. Butterscotch. Apple and pear crumble topped with brown sugar and cinnamon. Clove. Plenty of woody spice from the bourbon barrels. Then comes a wave of salinity and chalk with a mossy note in the background. Sweet with honey. Nicely sharp with dried fruits, oak and peppery tones. Gentle caramel sweetness, floral (roses with the honeysuckle), extremely smooth and well-balanced; moderate tannins, peppery mid-palate. Nicely oily mouthfeel.
Finish
Short to medium with lemon zest, white pepper and drying oak. Nice and long with mild spices and dry notes. Malt and herbs are strong. Pretty long; unctuous sweetness on the tongue, white pepper, the same floral notes hand on a long time, with a bit more rose. Enough oak tannin to balance the finish.
