- Nose
- Quite sweet, with toffee apples, apricots and honey. Burnt toast and hazelnuts, light incense and cedarwood. Fragrant oak and thyme honey, with a hint of brandied cherry. Raw golden sugar, molasses, caramel tart, boiled candy, vanilla, stewed pears, banana, pineapple. Floral. Old polished furniture.
- Palate
- Gentle arrival, fruity – honeydew melon, pears, peaches, mango and banana. Drier and wood-focussed – corns, sawdust, planking and vanilla. Sultana and dried apricot, floral barley, stem ginger and a touch of baking spices. Very sweet and fruity, banana flavored lollies. Sweet roasted vegetables. Traditional bourbon cask flavors of vanilla, caramel and nuts. Spicy with white pepper.
- Finish
- Short to medium in length with unprocessed grape juice, gentle white pepper and a degree of spirit rawness. Continuous caramel and cereal. Vanilla tips and orange peel. Long full powered finish. Strong malt, caramel and nuts. Softer sweetness with mellowed fruit flavors. Nice touch of oak.
