Description

This is a Straight Rye Whiskey from the Tumblin' Dice line, bottled by Proof and Wood Ventures. It was distilled in Indiana from a mash bill of 95% rye and 5% malted barley. The whiskey was aged for 7 years in new charred American oak barrels and then finished for an additional year in Laird's Apple Brandy barrels. This is a limited 10-barrel release, marrying bold rye with notes of stewed apple, orchard fruit, and caramel sweetness.

Aromatic with apple sauce, peppermint, caramel, sour green apple, rye spice, cinnamon, seasoned oak, honeycomb, orange peel, lemon zest, yeast, and Russian pumpernickel bread undertones. High-toned notes of Red Delicious apple and Bartlett pear combine with brown butter and cigar wrapper.
Palate
Bold and layered with caramel, vanilla, tropical fruit sweetness, strong rye spice, sour green apple, black grapes, allspice, lemon zest, light cinnamon, honey-vanilla sage undertones, and dill. Excellent rye hit before folding into apple cider, hint of malt, and orange oil.
Finish
Long and complex with lingering brown sugar, spice, tropical fruit, oak warmth, light oak, strong peppermint, floral qualities, residual lemon zest, white pepper, cinnamon, and green grapes. Dry with an oily mouthfeel and a finish of seasoned oak and green apples.
