Description

Crafted from organic barley sourced from Lacka Farm (25%), peated barley from Lacken Farm (25%), and an ancient barley variety called Hunter from Donoughmore Farm (50%), this version is the result of blending four casks previously holding bourbon, all distilled in 2019. Full of nuances, its aromatic and gustatory palette reveals a range of colors from the tenderest green to the most burnt Sienna.

Nose
Delicately earthy, smoky, mineral, lemony, and aniseed, with malty and vanilla notes. Scents of mint and rosemary, pear brandy, wet hay, oats, porridge, green bell pepper, ashes, peppermint, celery stalks. Medicinal, smoky, with crushed slate and oyster shells.
Palate
Fresh, bright, with soot and a medium intensity of smoke. Herbs and maltiness, grassy, lean and bright. Sweet and salty, slightly acidic, with lemon zest, thyme tea, and olive fougasse.
Finish
Long, balanced, medicinal and spicy (clove, nutmeg), with licorice-infused and saline peat. Fruity (pear, peach), harmonious, dominated by malted barley. Medium length, with bitter lemon, muddled herbs and grassy notes. Almondy smoke, cough medicine, salty edible seaweed, and fruitier notes.
