Nose
Initially peat, almost like a watered down heavy peat, coastal, retreats to salt and pork belly. Golden honey and barley with a gentle lace of smoke coming through, a hint of white tea, attractive citrus fruits, structured and balanced with a brush of anise as the maritime smoke grows stronger.
Palate
Sweet, with a good amount of honey, becoming dry and sour. Peat comes out, burnt wood, coastal salt. Sweet condensed honey with light pear infusion, followed by caramel custard creaminess.
Finish
Dry, fresh muffins, butter, burnt wood, with a noticeable ABV effect. Dried fish and wax. A lick of wood spices leading to the gradual surfacing of the smoke, spirited, lengthy and full volumed.
