Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment. This particular release, Bimber Single Cask #108/2 The Spirit Of The Underground Westminster, is part of the seventh release of The Spirit of the Underground series, a collaboration with Transport for London celebrating London Underground stations. It was matured in an ex-Madeira cask and bottled in March 2025.
