Nose
First ever fleeting of vanilla upon puffs of smoke/ash. Zinciness of new make, then a more rounded, sweeter, more mature peat. Hints of lemon peel, green olive brine, coal smoke, smoked bacon, cured ham, children's cough syrup, lemon, lime, cherry, red fruit, then dried apricot.
Palate
Immediate hit of sweet, fruity peat. Lemon cough drops, smoked paprika, smoked tea, burning wood, burning rubber, tar, then a more rounded sweetness of dried fruits, honey, vanilla, then a more savoury, meaty, umami character.
Finish
Long, warming, smoky, peaty, with a lingering sweetness and a touch of salinity.
