Description

Firkin 49: Dailuaine 2012 is a single malt Scotch whisky crafted by The Firkin Whisky Co. This unique expression is distilled at the Dailuaine Distillery in the Speyside region of Scotland. It is aged in a custom double oak cask, which combines ex-bourbon staves with virgin French oak, and is then soaked with Oloroso and Amontillado sherry to impart rich and complex flavors. [5] The casks are custom built and prepared by Firkin, and are a unique combination of ex-bourbon barrel and charred French oak staves. They are built into "zebra" casks of alternating stave types, then the cask is seasoned with a custom sherry blend made specifically for the whisky that will be going into the cask. [10]

Nose
Great intensity with lovely dark chocolate, dried leaves, cherry jam, earthy spice, roasted almond, savory and wild. Also caramel taffy, baked apple skins, roasted malt, candied orange peels, golden raisins plumped in milk, dried plums, toasted almonds, and baking spices. [8]
Palate
Lots of salinity balancing sweet dried stone fruit. Rich chocolatey notes, lively and zippy mouthfeel, maple syrup sweetness giving way to rich maltiness. Gentle meatiness, like melt in your mouth perfectly rendered bacon. [8]
Finish
Not explicitly detailed, but the palate suggests a long, evolving experience with rich and complex flavors. [8]
