Description

Signatory was founded by Andrew Symington in 1999. After discovering single cask single malt whisky while managing Prestonfield House Hotel, Andrew bought his first cask, a Glenlivet 1968, and is now one of the largest independent bottlers in Scotland. As of 2002, Signatory Vintage Whisky company is also the owner of the Edradour distillery. This Deanston was matured in a single first-fill Sherry Butt, cask number 900145, for 12 years, distilled in 2007 and bottled in 2020 at cask strength 64.4% ABV. It is non-chill filtered and natural colour. Only 630 bottles were produced.

Nose
Sweet and fruity with raisins, dates, milk chocolate, leather, and a faint note of pastries. Some orange citrus and old oak. With water, butteriness, brighter fruits, and even tropical notes like guava can appear.
Palate
Creamy mouthfeel with red berries, strawberries, milk chocolate, oatmeal raisin cookies, honey, and toffee. White pepper and malty sweetness with an undercurrent of orange zest.
Finish
Long, with dark chocolate, white pepper, fruit pudding, red berries, cinnamon, and toffee. Adding water shortens the finish but accentuates a pleasant creaminess.
