What stands out is the savoury cheese character, which carries from the nose onto the palate alongside oak. Spiced apple and woody notes lead into raisin, caramel, spice and vanilla, giving the Bourbon sweetness as well as a savoury edge. The long-lasting finish keeps warm oak and savoury notes in view. That contrast is appealing: it sounds distinctive without relying only on sweetness for character.
Savoury cheese meets warm oak.
The spiced apple and raisin give this some familiar fruit, but the savoury cheese notes make it a less straightforward fruit-led bourbon. Oak, caramel and vanilla add a warmer, richer side. That unusual savoury turn is interesting, though I’d prefer the fruit to lead more clearly.
