Nose
Red apples, tart green apples, stewed plums, and pluots, with hints of cherry reduction and jam. Underlying notes of faint oak, sweet malt, and light floral character are present, alongside a dusty, funky sherry influence with raisins and old calvados. Some charred oak, vanilla powder, dull brown sugar, and soft wood spices, with occasional whiffs of old soap or floral notes. [1, 2, 10, 14, 16]
Palate
Sweet arrival with cherry reduction, stewed plums, and jam, offering a medium viscosity. Notes of second-fill sherry, rancio, and umami are evident, balanced by light ginger. Flavors of apples, pears, cinnamon, honey, toffee, dried apricots, and vanilla emerge, with a light peppery kick. [1, 2, 10, 14, 16]
Finish
Long, with dark chocolate (70% cacao) and very light ginger, showing a good balance of malt and cask. It can be medium short and dry, with light citrus, peach, and pepper. The sweetness drops off, leaving notes of dry malt and sometimes hints of old water-damaged books or moss. [1, 2, 8, 10, 14]
