Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment using their own designed wooden washbacks. This is a single cask release, Cask #127, bottled exclusively for the Southport Whisky Festival in 2020. It was matured in an ex-bourbon cask.
