Description

Daftmill is a farm distillery located in Fife, Scotland, owned and operated by the Cuthbert family. Distillation occurs during the farm's quiet periods, using barley grown on their own farm. This particular bottling, distilled in 2010 and bottled in 2021, was created for The Daftmill Distillery Unofficial Fans Facebook group. It was matured in 5 ex-bourbon casks (046, 047, 050, 051, 056) and bottled at cask strength of 59.5% ABV. It is unchillfiltered and natural in color.

Nose
A highly appealing combination of cut grass and warm sourdough slathered in honey. Background notes of pale ales, breads, white flowers with pollen and a little youthful calvados. Water unveils more soft and plush cereal aspects along with more breads, toast, butter, yellow plums and some lemon barley water.
Palate
Juicy and sweetly fruity up front on arrival. Yellow plums, honey, flower nectars, grassy olive oil and tiny hints of white pepper and clove. An impressively thick and engaging mouthfeel. Dilution softens out the sweetness and balances it with more of these rich bready and biscuity notes. There are also more floral and cereal qualities once again.
Finish
Medium in length and a little sharper and more peppery than usual. Clean, peppery, and showing a nicely subtle herbal bitterness.
