Description

Midleton Dair Ghaelach Grinsell's Wood is a single pot still Irish whiskey, the first release in Midleton's Virgin Irish Oak Collection. It is a blend of single pot still whiskeys, aged between 15 and 22 years in ex-bourbon casks, then finished for approximately ten months in virgin Irish oak hogsheads sourced from 130-year-old trees in Grinsell's Wood, Ballaghtobin Estate, Co. Kilkenny. The oak staves were quarter-sawn in Spain and then crafted into hogsheads with a medium char at the Antonio Páez Lobato cooperage in Jerez. Bottled at cask strength and non-chill filtered, this limited edition release highlights the unique influence of native Irish oak.

Nose
Well aged bourbon matured pot still notes of vanilla, banana and pineapple work well with the Irish oak's contribution of darker woodland spice, cinnamon, coffee and redcurrant. Sweet vanilla notes are given depth by chocolate honeycomb and coffee beans, with red berries, pineapple and ripe banana complementing subtle aromatic oils.
Palate
Spicy oak, fresh straw, plenty of vanilla fudge, pineapple, a little cocoa sprinkled on caramelised apple. Rich allspice. Robust yet mellow, clove and cinnamon give way to dairy fudge and milk chocolate sweetness combining with a touch of stewed apple.
Finish
Very long and increasingly wood spice-driven. An exceptionally long finish, with some sweet spices slowly fading, leaving the final bow to the Irish oak. Lingering, with intense bittersweet oak and woodspice.
