Nose
Refined, dynamic. On the first nose, superb notes of citrus fruit (lemon, grapefruit) and coconut milk are underscored by grains of malted barley. The scene is set. Extremely complex once allowed to breathe, it develops herbaceous (sage, verbena), exotic (pineapple, passion fruit), vanilla and spicy (cumin) registers of great distinction. Increasingly medicinal (tiger balm), mentholated and vegetal (green tea), at the same time it also becomes deliciously rich (almond liqueur, apricot stone) and chocolate.
Palate
Clean, distinguished. On the attack, William's pears flood the palate with their sweet juices, and spices create a noble link with the mid-palate. Particularly exotic (banana, passion fruit, kiwi), it becomes increasingly floral (lily of the valley, lilac) and herbaceous (tobacco, ivy). At the end of the palate, white peach and elderflower create a superbly refreshing cocktail.
Finish
Long, lively. New spices (juniper berry, cardamom, green liquorice) and flavours of almond and green apple brings lots of energy to the start of the finish. Next, a medicinal malted barley (arnica, mustard poultice) enters the scene and leaves an indelible mark on the very end of the palate. The mouth-watering retro-nasal olfaction highlights notes of gentian and green pepper. The empty glass is delicately woody (oak), fruity (white currant) and empyreumatic (burnt wood, rubber).
