Nose
Fresh, sweet & sour, and very malty. Crumbly, chalky, earthy peat, fizzy lemon squash, a bit of aniseed - maybe fennel seed. Lactic sweetness, like a lightly sweetened cream cheese.
Palate
Big & peaty, fresh, sweet & sour, and remarkably malty. Fizzy soft drink reminiscent of cola. Red chilli heat, more fennel, and a huge chunky, bitter, earthy peat.
Finish
Long. Big chunky, earthy peat, aniseed / fennel seed, and a beautiful gristy, smoky malty-ness. Slight vanilla, blow-torched bitter lemon peel, fizzy freshness, and lemon cream cheese cake frosting / icing.
