Description

After establishing one of the World's leading whisky bars in Dornoch, Phil and Simon Thompson - better known as the Thompson Brothers - decided to take it a step further and start making their own whisky and gin on the site at the Dornoch Castle Hotel. Born from successful crowdfunding and a worldwide love of whisky, Dornoch's first whisky distillery was formed. While waiting for the whisky to mature, they also became independent bottlers. This particular 31 Year Old Islay Single Malt was distilled in 1989 and bottled by Thompson Bros for M&E Drinks and Whiskyhobo. It was matured entirely in a single bourbon barrel, with the distillery remaining officially undisclosed. This release was a Singapore and Indonesia exclusive with a total outturn of 264 bottles.

Nose
Very bright, aromatic, sweet and estery, with big notes of citrus and sweet apples intertwined with faint notes of light incense smoke and burnt sage. Less smoky than typical Laphroaig, with hints of vanilla and light oak. Fresh, bright, sweet, light, and well-rounded.
Palate
Oily, fruity, and smoky with terrific balance. Slightly oily texture with crisp, bright notes of honey, sweet citrus (pomelos), and gentle smokiness. Viscous texture and mild sweetness reminiscent of hot Chinese-style lemon barley water. Medicinal peaty notes emerge as sweetness recedes, mildly floral, mildly bitter, with a hint of smoke. Vibrant zesty, salty, and clean with sweet lemon rind, white ashy smoke, and salted plums.
Finish
Quite long, on sweetened herbal tea, citrusy and salty peat, black peppercorns, light floral notes, and cardamom. Long sweet citrus finish with a pure lifted white smoke that lingers.
