Description

Milk & Honey Apex - Dead Sea Aged is a fascinating single malt whisky from the Milk & Honey Distillery in Tel Aviv, Israel. This limited edition release was matured for 3-4 years, with a significant portion of its aging taking place at the lowest place on Earth, the Dead Sea, at 423 meters below sea level. Here, temperatures can exceed 50°C, accelerating the maturation process and resulting in a distinctive flavor profile. It was aged in a blend of ex-bourbon, ex-red wine, ex-STR, ex-Pedro Ximénez sherry, and virgin oak casks. This non-chill filtered and kosher-certified whisky is part of the experimental Apex series, highlighting Israel's unique terroir.

Nose
Sweet with French vanilla and mocha, notes of cigar box, refreshing spearmint, and pleasant oakiness. Hints of milky coffee, cinnamon, tobacco, dried fruit, rose petals, and a fresh coastal breeze.
Palate
A gentle beginning with black tea leaves, followed by a powerful wave of warm spices like cinnamon and coriander seeds, dark cocoa powder, and a pinch of crushed white pepper. Notes of toffee, toasted sugar, liquorice, and chocolate. It has an oily, soft texture with sweet and malty characteristics, hints of cherry pie, and a juicy sweetness with saline qualities.
Finish
Long and satisfying with candied ginger and cloves, joined by a bouquet of toasted herbs and coarse sea salt. A subtle salinity develops, with mineral notes and a hint of hibiscus flower.
